Our 2010 Napa Sauvignon Blanc exhibits ripe fruit characteristics of passion fruit, guava, and lemon zest. The grapes were harvested at the optimal time for Sauvignon Blanc to maintain crispness due to appropriate levels of tartaric and malic acid content. In addition, the malic acid naturally found in the grapes can be converted to lactic acid, making a wine appear “softer” on the palate. We inhibit this process by not inoculating the wine with a special bacteria frequently used for conversion. We hope you enjoy the fresh crisp flavor of the 2010 Mantra Sauvignon Blanc, Napa Valley.
