Elegant and bursting with flavor, this wine delivers the sultry elegance of a classic, big-time, Napa Valley Cabernet. This is a very carefully crafted wine, the stikes a wonderful balance of fruit, earth and spice on the palate and on the nose.

This delicious Napa Valley blend is perfect for a night in front of the fire… spent with that special sexy someone.

Tasting Profile

Look:

Dark purple hues through a slightly darker, slightly opaque core.

Smell:

Dark blackberry and blueberry combine with stewed plum, cassis and black cherry. A hint of spice adds intrigue and rounding to the vibrant nose.

Taste:

Bold red cherry, cassis, dark raspberry, cranberry and blackberry meld with subtle baking spice, bakers chocolate and a hint of slate mineral.

Finish:

Very long, rich and robust with dark fruit flavors that tail off into subtle mineral as the palate slowly drys.

Pairing:

Very flexible, but we’d recommend that you pair this wine with something rich, like a leg of lamb with rosemary. Serve with garlic red potatoes, apple sauce and reduced cranberries.

60% Cabernet Sauvignon, 20% Merlot, 15% Syrah Noir, and 5% Petit Verdot.
The Wine
During the 2009 harvest (mid-September to late October) the Cabernet was picked at 26 brix, Merlot at 25.6 brix, Syrah Noir at 25.8 brix, and the Petit Verdot at 25.8 brix. Each varietal was aged in 35% new French oak, COF, tight-grained barrels for approximately 24 months. The final blend was put together in 2011, re-barreled and held for another 6 months before bottling.

This is a very high quality hand-crafted, delicious and deeply flavored wine. It’s a great value for almost any food you might want to pair with and drink on a daily basis. Ripe black cherry with hints of tobacco and chocolate, brightened by the Petit Verdot, and given a round, fully integrated structure by the Merlot and Syrah Noir components. This is one of the best Syrah/Cabernet/Merlot blends we’ve ever made!

All Topel wines are lovingly handcrafted by Mark and Donnis, who employ minimalist techniques to transform simple grapes into world-class wines that are robust, yet balanced and elegant — soulful wines that perfectly reflect the soil and climate of their origin.

At Topel Winery, the art of making wine begins within 15 minutes after the grapes are harvested, with a “field crush” right in the vineyard. The grapes are then transported immediately to the winery to begin their transformation into wine. Topel Winery uses the highest quality fruit from our estate vineyards and from selected sites that grow grapes to our stringent standards, for making our different varietals.

Winemaker Mark Topel

Mark is the hands-on owner and winemaker of Topel Mountain Estate Winery, a “second career” that, to his delight, is consuming more of his time as years pass. While Mark was a connoisseur of wine for many years and spent a significant amount of time with some of California’s most prominent winemakers and growers, who became friends, mentors and supporters. Absorbing what he could from their extensive knowledge — and by auditing winemaking classes at the University of California-Davis — Mark became highly skilled in crafting wine.

A traditionalist by nature, Mark’s love of history led him to approach grape growing and winemaking from an intellectual perspective. He and Donnis planted the vineyards using tried and true techniques established by the Romans and the French — both of whom cherish hillside fruit — and adapted many traditional methods that have produced some of the world’s greatest wines for centuries.
