The finest premium grapes were hand selected for Cabernet, de-stemmed, crushed, and placed into small open-top bins to cold soak for maximum extraction prior to fermentation. During the two-week fermentation, the skins were punched down by hand three times a day to develop rich color and fine tannins. Once fermentation was complete, the wine was placed into small French oak barrels and aged for 20-months prior to bottling.

Our 2011 Cabernet is the latest vintage of our multi-award winning Cabernet Sauvignon. This limited production Dry Creek Vineyard Cabernet Sauvignon is elegant and refined, presenting an attractive mix of cherries, blackberries, and currants, complemented by balanced acidity, spices, and notes of toasty oak from aging 20-months in French oak. Firm, well-rounded tannins provide excellent structure and length to the finish of this complex, well-balanced wine.
