Aging in French oak tames the more aggressive tannins and adds sweet creamy notes reminiscent of crème brûlée and panna cotta. A subtle back note of sage serves to ground the opulent fruit and brings focus to the finish. The hearty structure of this wine will be further tamed with a few years of cellaring.
