Bottled in July 2019, this Sauvignon Blanc has aromas of lime blossom, flint, lemongrass, and white flowers rise from the glass. The palate is bright and fresh, echoing the nose with perfume and vibrant flavors of white peach, pear, fresh grass and a hint of vanilla. The mouthfeel is soft and graceful, leading to a long, elegant finish.
Picked at a low sugar to maintain freshness and the distinct Sauvignon Blanc varietal aromatics… pear, herbal, mineral and grapefruit aromas. A nice natural acidity livens the palate, and along with the lower alcohol, gives a fresh and unctuous quality to the wine.
About half of the clusters were allowed a few hours of skin contact after pressing to extract varietal character and concentration of flavor. Most of the wine was fermented in stainless steel, but 21% was fermented in French acacia wood barrels, which is found to emphasize the natural fruity character of Sauvigon Blanc. All of the wine spent more than 4 months aging on the lees to impart a creamy texture. 50 cases produced.
