The characteristic of this special Réserve Cuvée is a blend of three different vintages (2015 - 2016 - 2017) with mostly 100-year-old Grenache, complemented by very old Vaccarèse, Counoise, Mourvèdre, Cinsault, Black Terret, and Muscardin. Four parcels of Châteauneuf-du-Pape were selected for their outstanding potential : La Crau, Les Galets Roulés (pebbles), Les Urgoniens, Les Sables (sand). These parcels are collections of vineyards where the different varietals are planted within the same parcel.

In the vineyard, hand harvesting, destemming, and sorting on the plot were practiced. There was very limited manipulation of the grapes during the winemaking process and no mechanical extraction was utilized during fermentation to favor the soft diffusion of flavors, colors and to respect the tannins’ nobility. Pairing suggestions are grilled beef ribs, roasted pigeon with savory, veal fillet with black olive tapenade.
