The Carte Blanche Proprietary White is a Bordeaux Blanc inspired blend of Sauvignon Blanc and Semillon. Micro-climate and terroir were selected from Knights Valley’s Blau Vineyards for 64% Sauvignon Blanc and Alexander Valley’s De Lorimier Vineyard for 36% Semillon. Higher elevations and cooler climates allow for slow ripening, coaxing a full range of flavors that result in this vibrant and full-bodied white wine.

Mature vines (17+ years old) were selected from both vineyards that are planted on are loamy soils. The micro-climate has fog in the mornings; sunny and warm afternoons typical of the Valley floor/bench. Harvest was hand-picked into small lugs hauled with refrigerated truck, double sorted by hand, slowly pressed. Fermentation occurred at the natural temperature of the caves with indigenous yeasts. Barrel aging was done over 10 months with bi-weekly batonnage. Malolactic fermentation was stopped in order to keep freshness and overall balance.

Bright pear, lychee, stone fruits and white flowers highlight the intense nose. A fresh attack is crisp and velvety, marrying white peach, pear, lemon zest, and crushed rock. Ripe tannins accentuate the finish and zesty acidity offers ample structure for aging.
