A blush gold with warm copper highlights, this wine features bright scents of flower blossom, barely ripened white peach, kumquat and lemon/lime, with underlying notes of vanilla wafer, wet stone and an hint of new leather. Entry on the palate is soft, then expands as kumquat and white peach carry over from the nose, along with dried apricot, lime and the character of a passing ocean breeze. Extremely fine bubbles provide an elegant presence through to the finish, which trails off with fresh leather, lingering fruit and subtly vibrant acidity that calls you back for another sip.

With a richly developed character inspired by our favorite Champagnes, our No. 5 bottling is a blend of 65% Chardonnay and 35% Pinot Noir, produced on Méthode Traditionelle. This wine is sourced from cooler coastal regions of California and is non-vintage, affording greater ability to achieve our desired style. Features soft bubbles and freshness that yields to creaminess from extended aging.

The extended growing season in these cooler coastal regions leads to wine of heightened complexity. Suggested food pairings from winemaker Jenny Wagner: Sushi, caviar, truffle popcorn or a charcuterie board. “My goal is to create an elegant wine with a richly developed character. Even though this is a California sparkling, I take inspiration from my favorite Champagnes.” - Jenny Wagner, owner and winemaker.
