Born on the slopes of a spectacular, low-yielding hillside vineyard, the 2019 Chardonnay matured slowly in classic fashion under temperate day skies and cool night temperatures between 50-65°F. Harvested in the wee hours, the fruit was pressed as whole clusters in the wine cave by 7 am. Clean juice was fermented with a special South African yeast at 55°F over 15 days in a stainless steel tank. The dry wine did not undergo any malolactic fermentation and was aged in neutral, 7-9 year old French barriques for 18 months in the wine cave before bottling.
