Our Wolf’s Head Cabernet Sauvignon comes from the Calistoga region located in the northern part of Napa Valley, home to some of the biggest, boldest wines in the Napa region. The vines are planted in a rich volcanic red soil and the high daytime and cool nighttime temperatures provide for intense colors, rich flavors, a touch of acidity, and a ton of tannic structure in the grapes.

Fermented in small format stainless steel tanks. Cold soaked 5 days prior to fermentation. Temperature maintained below 80 degrees and a post ferment extended maceration of an additional 5 days. Malolactic fermentation occurred in barrel with aging on lees for at least a year.

A dark inky ruby red with aromas of blackberry, cherries and raspberries, violets, and a hint of cedar and eucalyptus leaves. Big flavors of blackberry compote and a soft spice of cedar cigar box and tobacco. Long soft cocoa, tobacco, and spice on the finish. Drinking beautifully now and will age nicely for another 10-20 years.
