Manual harvest is made at night in boxes of 12 kg. The harvest is only carried out by qualified winery staff, selecting the bunches in each vine in the vineyard. Fermentation in small tanks with 5 daily manual pumping overs. Total maceration of 14 days. Aged for 36 months in second and third use French and American barrels. The wine is refined for several months in concrete tanks after passing through the barrel. The final result is the expression of our philosophy. Garnet color, clean and bright. Elegant aroma with an excellent combination of dried fruit, licorice, spices, cocoa and coffee. Elegant with delicate and silky tannins. Intense flavors of dried fruit, forest floor, and tobacco. Goes well with cured cheeses, grilled meats, hunting meat and traditional stews.
Old vines located in Rioja del Reyno, planted in bush and worked with a traditional viticulture. Vineyards of Tempranillo, Garnacha, and some Graciano over 50 years old. Continental climate with Mediterranean infuence, predominantly alluvial and clay-ferrous soils.
