Grapes were hand harvested, Cluster sorted and destemmed, Cold soaked for 3 days and inoculated on the 4th in an open top tank. Fermented for 13 days with a 4-day extended maceration. Free run and press fractions kept separately. 70% new French oak for free run. Neutral oak for press.
Deep garnet-purple colored, the 2017 Cabernet Sauvignon Poston Crest Vineyard skips out of the glass with Morello cherries and juicy black plums scents, plus suggestions of toasty oak and pencil lead with a touch of garrigue. Medium to full-bodied, the palate is elegantly styled with soft tannins and seamless freshness, finishing long and fragrant. The palate leaving behind notes of blackberry and cedar.
The year began with abundant rainfall, followed by a mild Spring resulting in extended flowering with little shatter. A Labor Day weekend heatwave kicked harvest into high gear, then cool weather allowed sugar levels to return to normal. By the first week of October nearly 90 percent of the 2017 grapes were in when warm, fierce winds fueled an unprecedented firestorm.
