At Clos de Sarpe the harvest begins when the grapes are perfectly ripe. They are made manually in crates by a team of pickers-sorters who return from one year to the next and who therefore work with the fruit of experience and the concern for precision demanded by Jean-Guy BEYNEY and Maylis MARCENAT. The young Merlots are picked first, then the old Merlots and then the Cabernet Francs.

The grapes are meticulously sorted by a densimetric bath and only the finest seeds participate in the production of the great wine. The vinification is gentle in order to extract only the noble part of the tannins. Vinification takes place in hot and cold thermo-regulated raw cement vats and in 600 liter barrels.

2016 is shaping up to be a great vintage which combines suppleness, elegance and fruit, with great purity with silky tannins. The wood is perfectly integrated. The power of our clay-limestone terroir is expressed from the attack, giving amplitude to the wine and a great freshness on the finish.
