Concerned about the processing qualities required for an excellent wine, the estate works all its production in the same way. Vinification is spread over 4 weeks to obtain structure. The use of 100% new wood has become the norm in the field, including at the entry level. This work is the result of a long-standing partnership with the Ermitage (Charlois group) and Cavin cooperages, both located in Burgundy. As Henri Jayer summed up in his thoughts here: “There are no great wines without new barrels.”
This vintage of Gevrey-Chambertin “Cuvée Père Galland” is a nod to a person who, at the time, was the promoter of the installation by Jean-Michel Guillon. This Gevrey-Chambertin is rather racy with aromas of black fruits that are omnipresent and at the end of the palate, a slight tannin is felt. Enjoy with a rack of lamb or Sea bream a la royale. Keep 3 to 15 years for peak enjoyment.
