The grapes were hand-harvested and fermented with native yeast in open-top fermenters. The resulting wine was aged for 18 months in French oak barrels and bottled unfined.
A seamless fusion of dusty dark cherry, cedar, vanillin oak, and a hint of cocoa fills the nose with tempting aromas. Spicy cedar notes balance the rich, ripe cherry entry. Red currant, plum, and a trace of pomegranate and espresso join in and then linger into the finish. Softening tannins and oak line the palate, giving the wine plenty of structure and aging potential. If enjoyed before mid-2021, we recommend decanting or opening at least 30 minutes before serving.
Well-seasoned tri-tip served with crispy Hasselback potatoes with rosemary and garlic, or lasagna with pork sausage make ideal pairings for this delicious Cabernet. The optimal storage temperature is 55-60 °F and recommended cellaring time is 1 to 10 years.
