These are the great lords of the appellation. There are seven of them (les Clos, Vaudésir, Valmur, Blanchot, les Preuses, Grenouille, Bougros), all grouped together in the same well-defined geographical area. Rich and generous, harmonious and long, they must be “waited” for three to four years to express all their greatness. They will be able to age ten years for good years, fifteen years and more for good years. At a temperature of 12° to 14°, pair them with refined dishes: a lobster or a turbot… Dare a fifteen-year-old Grand Cru with a beautiful foie gras…

The Chablis Grand Cru is located in the town of Chablis and on the right bank of the Serein (small river which waters and crosses the vineyard), to the north-east of the town, between 100 and 250 meters above sea level. The Chablis Grand Cru appellation is unique but it is divided into 7 climates, listed on the label, with an assertive but nuanced personality, where the Chardonnay achieves wonderful variations: Bougros in the northwest, Preuses, Vaudésir, Grenouille, Valmur, Les Clos and Blanchot to the south-east.

These 7 climates benefit from a soil composed of limestone marl, very rich in tiny fossil oysters (Exogyra virgula). The land dates from the Upper Jurassic, formed 150 million years ago.

Fermentations in oak barrels aged 2 to 3 years. The wine is then racked to remove the fermentation lees. Then begins the aging phase, which will last 12 to 18 months depending on the vintage. A light fining with bentonite will then take place, in order to eliminate the proteins in the wine. Finally, gentle filtration before bottling will clarify it naturally.

Beautiful shiny and deep color, golden yellow with green reflections. Pleasant nose, with subtle scents of dried flowers (lime blossom, white lilac) and very ripe white-fleshed fruits (peach, pear). Characterized by a beautiful structure from the attack (freshness and roundness are there), this Grand Cru Les Clos develops delicate aromas of small dried fruits, white peach and fine spices on the finish.
