The journey of this wine begins in the vineyard, where each acre yields a limited 3.0 tonnes, ensuring optimal concentration. Harvested on April 20th, 2021, the grapes underwent traditional winemaking, involving daily over-pumping in steel tanks to extract the wine’s essence. Controlled temperatures of 23°C – 25°C during alcoholic fermentation preserved the grapes’ integrity, and a complete malolactic fermentation ensued.
