When harvest time arrives, we accept, with humility, that the quality of our fruit has been set by nature and our helping hands in the vineyard. Grapes are fermented in small batches of about one ton. This allows us to keep each pick separate, and then to learn what each has to offer. Once in the cellar, our winemaker takes a minimalist approach in handcrafting our wines. Our aim is for balance, complexity, and elegance, while displaying the pure, and sometimes unpredictable essence of each vineyard and vintage. We produce a limited quantity, so we can focus on the quality from vine to bottle that you’ll enjoy in your glass. And, we age most of our wines in French oak, from 24 to 33 months, before laying them to rest in bottles.
