The 20-hectare Domaine is on the Côte Vermeille, wind-swept and sun-soaked, with a terrain in the form of an amphithéâtre facing the sea. Ancestral vines were planted here by the Phoniciens in the 12th c BC. A well-known winemaker in Banyuls, Romuald was recently elected president of the Collioure AOC. The Domaine focuses on preserving biodiversity and is certified Haut Valeur Environnementale (HVE) 3.

The terroir consists of a brown schist terraces that demand intense manual labor. The vines of Grenache, Carignan, Syrah, and Mourvèdre are on the average 25 years old. The grapes are hand-harvested into 15 kg crates before they are stored in a cold room at 2-3°C for 24 hours for manual sorting, berry by berry. Vinification is done preceded by a cold pre-fermentation maceration at 5°C for 3 days. Fermentation and further maceration occur in stainless steel vats for 3 weeks, and warm post-fermentation maceration is for 3 days at 28°C.

The wine is aged on fine lees in tuns for 1 year and bottled at the property 13 months after the harvest. This complex wine offers aromas of ripe cherries, mocha notes and a hint of salinity. Recommended aging in the bottle is between 12 and 15 years.
