This label represents the journey that the Famiglia Cotarella has undertaken to enhance the value of an ancient native grape variety from the Montefiascone area: Rossetto. This grape, characterized by its small, compact clusters and limited yields, can produce a wine of great body and extract when properly cultivated and vinified. Thanks to its good sugar-acid balance and distinctive aromatic nuance, Rossetto offers remarkable potential.
The 2021 vintage began with temperatures below seasonal average. Spring showed normal conditions. The beginning of April, when budbreak was well underway, brought a sudden drop in temperatures resulting in lower yields but fortunately not impacting the quality of the fruit. Summer was normal, with good temperature fluctuations between day and night, allowing the grapes to ripen in a regular and balanced way.
Once the carefully selected grapes arrive at the winery, they undergo a process of cryomaceration, which enhances the varietal characteristics of Rossetto. The first stage of alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 13–15°C. The second stage of alcoholic fermentation, along with malolactic fermentation, occurs in barriques, where the wine also undergoes its aging process.
Bright straw yellow in color, the nose is sweet with notes of yellow flowers followed by a hint of apricot. On the palate, the wine is direct and assertive, showing great balance with the oak.
