Inspired by and named after her grandfather Joseph Phelps, SEPPI embodies the spirit and honors the legacy of the man with whom she shared such a special bond. With a focus on producing small production sparkling wines from heritage California vineyards, each bottle of SEPPI represents a distinct snapshot of the time and place in which it was produced, all rooted in a foundation of exceptional terroir.
SEPPI 2018 Brut Rosé was produced in the traditional Champagne method by legendary winemaker Keith Hock. A base wine of Chardonnay was fermented in 30% neutral French oak, 70% stainless steel and blended with Pinot Noir before tirage bottling in June 2019. The wine aged in bottle for 28 months on lees before disgorging in November 2021 with a dosage of 5g/L.
