Vineyard work respecting life and with minimal intervention. For the production of a macerated rosé, only years of perfect phenolic ripeness and impeccable health are selected. This rosé cuvée is vinified according to the traditional method of crushing the grape bunches with the feet. The crushed grapes, in contact with the juice, release their aromas, tannins, and color.
Exclusively from the Largillier monopole, made from Pinot Noir grapes of a single vintage. The SUBSTANCE sub-parcel is selected to create this wine. This cuvée is perfectly balanced and elegant, with flavors of small red berries, raspberry eau-de-vie, and a vinous finish with notes of cherry pit. The attack is ample (due to the clay soil of KM2), mineral, and refreshing, leading to a long finish (due to the limestone soil of KM2).
