At harvest during late October, the Cabernet Sauvignon and Merlot lots from each vineyard were separately hand-picked, hand-sorted, and gently crushed and de-stemmed and moved directly to fermentation tanks without use of any pumps. The Cabernet Sauvignon and Merlot lots were separately fermented with Bordeaux yeast strains. After extended maceration, 100 % free-run wine only was moved to French oak barrels from the forests of Alliers and Troncais. After extended barrel aging for 35 months, the final blend was bottled 100% unfined and unfiltered.
On the nose the wine shows lovely, perfumed aromas of cassis, vanilla, licorice, and cedar. On the palate, the wine is bursting with a myriad of delicious, lush mountain berry flavors-blackberry, black cherry, blueberry, raspberry, vanilla, and licorice notes, are followed by chocolate, mint, coffee and spice notes on the finish. The concentrated fruit is wonderfully balanced by rich, velvety tannins throughout the lengthy finish. The PFW 2009 Cabernet Sauvignon is thrilling and approachable now at release, and should evolve beautifully with careful cellaring over the course of the decade.
