Both vineyards hand harvested in the wee morning hours. Hand sorted and destemmed into open top stainless fermenters. Slow cool fermentation with a combination of punchdowns and pumpovers. Then gently pressed and rested in used Bordeaux barrels. Blended with thoughts of Bordeaux bottlings we have had along our journey. - Eric Story
