The grapes were sourced from the estate and neighboring York Creek Vineyards, with the entire blend being solely from the Spring Mountain Appellation and all under estate control. The first grapes to come in were the Petit Verdot. Weeks later the Cabernet Sauvignon hit perfect physiological ripeness and the multiple microclimate blocks came in nicely spread out due to the moderate heat. Each vineyard block was then aged separately for 22 months in French oak barrels, 70% new. 12% Petit Verdot was added for further structure and to add complexity to the nose.

The 2021 Spring Mountain Cabernet exhibits the darkest purple the estate has ever produced. Blackberry, caramel and anise jump from the glass. There are beautiful notes of cassis concentrate, cedar and dark cigar tobacco. The wine has a pretty and silky entry with more dark berry fruit and cigar box notes. Black cherry and rich dark chocolate are also present on the palate. The tannins are very firm yet chalky and not biting, with strong mountain acidity to balance. The wine has a long cocoa nib mocha finish.
