This is a voluminous wine–from front to back. The lofty fruit aromas carry a certain weight, hinting at what is to come. In the mouth the Chenin Blanc displays a delightful viscosity that glazes the taste buds. The rush of fruit slowly recedes to exhibit a hint of oak structure and a refreshingly persistent acidity, which is tempered ever-so-slightly by a minuscule dash of residual sweetness.

Winemaker Notes The grapes were harvested and held on the skins for a period of 12 hours in order to maximize phenolic extraction. They were then pressed and the juice fermented in stainless steel tank, at a cold temperature. After fermentation, the wine was stored in contact with the fermentation lees for a period of 6 months, with frequent stirring to introduce oxygen and bring the lees into suspension. A small portion of the wine was aged in once-used French oak, while the majority saw only stainless steel. It did not undergo Malolactic fermentation.
