In 2012, Stave 28 welcomed Jared and Dan into the fold and together we produced an excellent Cabernet Sauvignon & Cabernet Franc blend. The fruit was farmed in the famous Chalk Hill AVA. Equal parts Cabernet Sauvignon and Cabernet Franc were co-fermented to seamlessly join the two flavor profiles. We selected French oak and American oak barrels to age this blend and let the wine improve for 3 years in barrel before releasing it. Wine #10 is a further extension of the Stave 28 “Reserve” concept. Often, the wines of Stave 28 are wound up and require an extra year to express themselves correctly. Over time we have come to know our wines and how they bloom and unfold to something only time can create.
