This champagne displays a deep color, of a rather fluid and luminous appearance. The color is a pale golden yellow with strong straw yellow reflections. It is enlivened by fine and vivacious bubbles which make up a tenacious collar. The visual sensation indicates an opulent and nuanced wine.

The first nose evokes fruity scents of apple, pear, peach, blackcurrant, with spiced notes of black pepper and cumin delicately enhanced by perfumes of wallflower and mimosa. Once aired, the champagne reveals notes of damson, fleshy rose, pomelo, candied apricot, with hints of ginger and green tea.

The approach on the palate is supple and fresh, with a smooth and creamy effervescence. The champagne develops a fruity, pulpy and fleshy matter, carried by a fresh and citrus acidity with a hint of pomelo. The middle of the mouth is orchestrated by a minerality consisting of clayey-limestone, which confers a tactile and mature fruit depth, much elegance and a fruity resonance. The overall effect is balanced and fresh, reaching for a homogenous finish of candied fruits, nicely enhanced by spicy nuances, and zests of candied citrus fruits.

The cuvée Sélection Montgolfières is a champagne which allies freshness and gourmet fruitiness for a festive tasting, well paired with fleshy dishes.
