The 2014 Trois Greco comes entirely from the Greco varietal, a very important white varietal in many portions of southern Italy. The grapes are hand harvested from their clay-soiled vineyard in mid-September, and brought into the cellar for a gentle pressing and fermentation in stainless steel. After a short time with lees contact, the wine is bottled a pale yellow with incredible aromatics of tree and citrus fruit. Very fresh and pleasant on the palate, the there is balanced acidity as well as a texture and slight weight that adds to the complexity of the finished wine. Enjoy this with white fish, pork, and firm cow’s-milk cheeses.
