Location

In the northwest of the Côte de Beaune, the vineyard overlooks the picturesque village of Ladoix-Serrigny. Located at the foot of the hill of Corton, the area called “Les Chaillots” covers 3 continuous hectares.

Soil Type

The soil is composed of limestone mixed with clay.

Vineyards

Exposed to the East / Southeast, the vines are situated at an altitude between 220 and 260 meters above sea level. Average age of the vines: 30 years old. The vines are worked using sustainable viticulture.

Vinification

Traditional vinification in thermo-regulated stainless steel. Pre-fermentation - cold maceration for ten days. Long fermentation during which pigeages and pumping over are performed. Aged in oak barrels for 12 months. 20% new oak and 80% oak barrels used between 1 and 5 times. The oak is mainly sourced from the Vosges region.

Tasting Notes

Garnet color with purple hues. The bouquet is flattering with hints of red fruits, candied fruit, fresh wood and tobacco. The taste is delicious, delicate and silky tannins provide a good length and a nice character. Ideal with cured hams and fibrous and subtle meats (rabbit and boiled beef), or spiced meat and poultry (curry), organ meats in sauce and game.
