Much more fruit-forward with black cherry and roasted black plum and more full-bodied than typical Malbec’s, yet an extremely well-balanced, polished and elegant wine with soft and velvety tannins with a long finish. Great with lamb and other roasted game, including duck, pheasant, and yes, even turkey. Harvested whole cluster, hand-sorted, de-stemmed, berry sorted and cold-soaked for 5 days. Fermentation was in open-top bins with cultured yeast, with Individualized pump-overs. Malolactatic fermentation was finished in barrel.
