Under $30 for a Premier Cru Chablis from a producer who has been growing in the region for 4 generations. Romain and Damien Bouchard began making wine not even a decade ago, following generations of watching over top Grand and Premier Cru sites in Chablis. They evolved from providing exceptional fruit for other winemakers, to crafting their own small lots of exquisite wines with a minimalistic and traditional approach. The brothers have been called “perfectionists”, and it shows!
Back in 2018 Robert Parker’s Wine Advocate welcomed them with open arms, “2016 is the debut vintage for this promising new Domaine and my first impressions indicate that Domaine de l’Enclos is a very welcome addition to the Chablis firmament indeed.”
Since 2018, they’ve been Certified Organic though they implemented sustainable practices well before the official stamp came. They have set a new, higher standard for Chablis, using the best fruit from the best sites, like the superbly situated Premier Cru of Vau de Vey, and choosing to use indigenous yeasts and minimal SO2.
The result is simply gorgeous. This wine comes from one of the coolest premier cru plots which sits on a super steep slope facing east. Think bright acidity with tons of green apple, yellow peach, white flowers and classic salinity. The texture here is soft and bright with a finish you’ll remember for weeks to come.
