Today’s 2007 Ideology Cabernet Sauvignon is the ultimate expression of Napa Valley Cabernet Sauvignon. Bold, juicy, complex and elegant, this wine is a must-drink for the Holiday season - and beyond.
This wonderfully balanced wine was awarded a stellar 95 Point score from Wine & Spirits Magazine. It is also #57 on their list of the Top 100 Wines of The World.
We managed to get our hands on every last bottle that the winery had and, as excellent as it is, this wine will sell out very quickly. Please do not miss out.
Enjoy now, or lay a few bottles down for the next several years.
Pair this food-fantastic wine with a hearty roast, or a grilled Portobello mushroom sandwich with garlic aioli.
Tasting Profile
Look: | Completely opaque with a dark, foreboding crimson core and ruby edges. Spin the wine and watch as tall, skinny, wine-stained tears from high up on the glass, before moving slowly downward. |
---|---|
Smell: | Dark, smoky cherry with rich dark plum, leather, and tobacco. As the wine breathes, it opens up to reveal sweet pine, baking spice, cocoa bean, and savory herbs. |
Taste: | Big, juicy, bold fruit including cherry, raspberry, and dark plum. These flavors are followed closely by dried currant, dried cranberry, and dark leather. |
Finish: | A plush and chewy finish that eventually dries the lips, cheeks, and tongue, leaving behind a soft hint of slate. |
