2007 Cabernet Sauvignon
California: Napa Valley
Where to begin with this extraordinary wine? How about, get yours, now, before we run out!
Today’s 2007 Ideology Cabernet Sauvignon is the ultimate expression of Napa Valley Cabernet Sauvignon. Bold, juicy, complex and elegant, this wine is a must-drink for the Holiday season - and beyond.
This wonderfully balanced wine was awarded a stellar 95 Point score from Wine & Spirits Magazine. It is also #57 on their list of the Top 100 Wines of The World.
We managed to get our hands on every last bottle that the winery had and, as excellent as it is, this wine will sell out very quickly. Please do not miss out.
Enjoy now, or lay a few bottles down for the next several years.
Pair this food-fantastic wine with a hearty roast, or a grilled Portobello mushroom sandwich with garlic aioli.
Completely opaque with a dark, foreboding crimson core and ruby edges. Spin the wine and watch as tall, skinny, wine-stained tears from high up on the glass, before moving slowly downward.
Dark, smoky cherry with rich dark plum, leather, and tobacco. As the wine breathes, it opens up to reveal sweet pine, baking spice, cocoa bean, and savory herbs.
Big, juicy, bold fruit including cherry, raspberry, and dark plum. These flavors are followed closely by dried currant, dried cranberry, and dark leather.
A plush and chewy finish that eventually dries the lips, cheeks, and tongue, leaving behind a soft hint of slate.
What the Winery Says
Lush, deep and dark, with impeccable structure, the Cabernet belongs in any serious collector’s cellar.
Meticulously selected, then hand harvested and sorted, this is the ultimate expression of the terroir here on our estate vineyard. Four days “cold soak” assures maximum color and flavor extraction and fine, elegant tannins. Nineteen months in French oak beautifully frames this remarkably opulent, complex vintage.
A textbook growing season of warm days and cool nights – only time will tell if it surpasses the outstanding 1997 vintage.
Dense and nearly black at its core, the wine is richly perfumed with ripe black plum, dusty blackberry, espresso and tobacco. Lush, concentrated flavors spill out of the glass: Black cherry, cocoa, turned earth and a judicious touch of tasty oak. Flawlessly balanced with an endless, mocha-fruity finish, this wine is structured to last.
About the Winery
Ideology was born from our sheer passion for wine and for the Napa Valley. Aside from the science of wine making, our senses define the direction of our wines. Our commitment and dedication to creating handcrafted, world class wines that thrill and delight the senses is the basis of our philosophy.
We’re not sure exactly how or when it happened … whether it could be defined by a precise moment in time, or whether it was a gradual revelation - but it happened. Joni and I fell in love with the beautiful, idyllic Napa Valley wine country. Our love affair went beyond the vineyard covered countryside. We fell in love with the people … the way of life … the lush, provocative, boutique wines we discovered off the beaten path and, of course, the winemaking process itself. We were hooked.
Fast forward to today, where we proudly nurture our grapes on our estate vineyard, the Robert Williamson Family Estate. Our meticulously hand harvested fruit is then lovingly made into wine at our multi-winery facility, Silenus Vintners. It is here that Ideology Cellars’ wines are served in a beautiful tasting room along with thirteen other boutique wines produced by families with stories similar to ours. We are proud to have made the transition from a coastal, custom home builder family, to Napa Valley vintner – and we haven’t looked back. We invite you to visit us and enjoy our wines in the tasting room, or perhaps catch us for a barrel tasting in the cellar. Whichever your pleasure, we look forward to sharing our wines with you.
