Today’s 2005 Loma Vista Cabernet Sauvignon is, in a word, remarkable.
This wonderful find is juicy, balanced, elegant, voluptuous and quite delicious. Our entire tasting panel was instantly smitten with this wine and, collectively, our only regret is that we could not get our hands on any more of it.
This Cabernet Sauvignon is classic Napa Valley. It is an approachable wine with plenty of complexity. Plush tannins make it a pleasure on the palate while balanced acids make it a wonderful compliment to most meals. Enjoy this wine all on its own, or pair it with a hearty red meat dish - like a juicy grilled t-bone.
This wine is in short supply, dear Operative, so please make your choice… quickly.
Drink now, or hold for another 10 or more years.
Tasting Profile
Look: | Deepest crimson red, with perfectly even coloration from the dark heart of the wine out to the edges of the glass. After a hearty swirl, tall, skinny columns of rapid-moving legs start high up on the glass wall. |
---|---|
Smell: | Lush and full, bursting with aromas of fresh blackberry, blueberry, wild raspberry, strawberry, sweet spice and toasty oak. As the wine opens up, follow-on aromas are revealed, including dried fall leaves, leather and sweet dried tobacco. |
Taste: | Dark, juicy and delicious, led by black cherry, ripe blackberry, strawberry and black currant. After the wine breathes for a little while, it opens up, revealing sweet tobacco, sweet spice, leather, cigar box and pencil shavings (cedar and graphite). |
Finish: | Ultra-long and packed with long-sustaining flavors of red and black fruit. As fruits fade, earthy tobacco, spice, leather and minerals are revealed. At the tail end, a hint of black pepper provides a poignant punctuation. |
Pairing: | This dark and earthy Cabernet yearns to be served with something equally intriguing. A beef bordelaise would be a delightful pairing. |
