Over the last six and a half years, we’ve closely followed Astrale e Terra winery and its fabled winemaker, Scott Harvey. Both have delighted us with superb hit wine after hit wine. Today’s perfectly aged Atlas Peak Cabernet Sauvignon is soft, elegant and perfectly pleasing to the senses. All of the senses.
On the palate, this wine is soft and slightly plush with a crushed velvet grippiness that gradually encroaches at the edges. On the nose, the wine is a tad shy on opening. As it breathes, it awakens to reveal lovely aromatic fruit, leather, tobacco and soft spice.
This very highly recommended wine is drinking beautifully and it will continue to impress for a few more years to come.

Look: | Darkest maroon with a dark and slightly opaque heart of purple. |

Smell: | Big and bold with stewed plum, blackberry and blueberry compote, milk chocolate, aged tobacco, soft leather, black cherry and a touch of briar patch. |
Taste: | Shy on opening, but as you swirl this wine, it opens to reveal dark and lush fruits of black cherry, mixed berry compote, braised fig, and braised plum. These are accompanied by leather and sweet spice. |
Finish: | Very long, especially if you enjoy after extended decanting. Dark fruits and earth gradually yield to hints of black pepper and cinnamon stick. |
Pairing: | Enjoy this elegant and perfectly aged Cabernet with a rare, herb rubbed filet mignon. |
