Tasting Profile
Look: | Deep and dark with an intensely inky core of darkest crimson. At the edge of the glass, a chubby ring of garnet cuts a beautiful circle around the wine. |
---|---|
Smell: | Lush, heady aromas leap from the glass, led by stewed berry fruit and stewed plum, reminiscent of a mixed compote. This dense aroma is followed by classic Cabernet aromas of chocolate, tobacco, black cherry, leather and a touch of soft cedar. |
Taste: | Big and bold, with dense, intense blackberry, plum, pomegranate, tobacco, spice and dried fall leaves, followed by baker’s chocolate and toasty oak. |
Finish: | Extra long, with intense black fruit that very gradually fades to tobacco, subtle spice and a hint of cocoa dust. |
Pairing: | A thickly cut filet mignon with a mushroom garlic sauté and a dollop of green peppercorn butter on top. |
