Smell: | Shy and forresty on opening, this wine really begins to exude deep red fruits after just a bit of swirling. Deep black cherry, quince, tart cherry, tobacco, baker’s chocolate and candied cherry, all backed up by smoked campfire log, black licorice, sage and sweet spice. |
Taste: | Bright and bold, this wine presents a plethora of red fruit, earth and spice. Tart cherry, cranberry, tobacco, bing cherry, red plum, and oolong tea leaf sit atop sweet spice, dried fall leaves and a hint of sage. |
Finish: | Structured and very long with touches of pomegranate, plum, rhubarb and dried cherry. At the tail end, cinnamon and sage persist. |
Pairing: | Enjoy this wine with a mushroom risotto or grilled eggplant slices with olive oil and balsamic (grill on medium heat). A mildly seasoned Chinese five spice chicken would also be a remarkable treat. |
