Paint Horse Winery
2006 Sonoma Valley Cabernet Sauvignon
California: Sonoma County: Sonoma Valley
This Paint Horse Winery 2006 Sonoma Valley Cabernet Sauvignon is a fantastic example of Sonoma Valley Cabernet.
This is a big Cab with great structure and very well-integrated tannins. As it breathes, it opens to reveal softening fruit, leather, and spice components. Drinking beautifully now, today’s wine still has plenty of life left in it.
Enjoy this darkly layered wine with bold meat dishes. Prime rib would be the perfect selection, with the fats in the meat serving to cleanse the palate of any tannin build-up. Bon appétit!
Deepest, darkest scarlet, and very nearly completely opaque at its heart, with a gorgeous red ring at its edge.
Lush on the nose, with stewed dark plum and boysenberry laid overtop sweet tobacco leaf, clove, dark chocolate, black peppercorn, and a touch of lavender.
A beautiful blend of fruit and earth, with black cherry and blackberry greeting you initially, quickly trailed by aged cigar box, pipe tobacco, fresh berry bramble, sage, espresso bean, and a kiss of pomegranate black tea.
Best decanted, this wine has a classic Cab flavor profile, with a well structured finish highlighted by soft, velvety tannins.
Grilled prime rib with a fig and balsamic reduction.
