Today’s 2008 Ascentia Alexander Valley Cabernet Sauvignon is another fantastic wine from our friends at Geyser Peak Winery. Winemaker Ondine Chattan never ceases to amaze us with each new wine we try!
Jam packed with fruit, spice, and a touch of minerality, today’s Cab is everything you look for in the varietal. What sets this wine apart is its absolute elegance in the glass. Impossibly smooth and well rounded, today’s wine had our tasting panel speechless upon first sip - which is no small feat!
We were able to get our hands on the last remaining cases of today’s limited-production Cab - please don’t wait!
Tasting Profile
Look: | Inky, sanguine red through the center of the glass, with touches of ruby closer to the edge. |

Smell: | Beautifully aromatic, with fresh sweet plum and boysenberry layered atop aged pipe tobacco, dark baking spices, hints of thyme and rosemary, and a faint glimmer of dried rose petals. |
Taste: | Incredibly well rounded, with fruit and terroir notes in great balance. Leading with flavors of black cherry, black currant, and a touch of cranberry, the wine seamlessly transitions to notes of berry bramble, cedar wood, espresso bean, clove, dark chocolate, and a touch of cinnamon. |
Finish: | Quite elegant on the finish, with a smooth entry followed by solid structure and velvety, well integrated tannins. |
Pairing: | Porcini and rosemary encrusted beef tenderloin, grilled to perfection. |
