Tasting Profile

Look:

Deepest, darkest garnet at its heart, with a slight red ring encircling the glass.

Smell:

Classic Cabernet aromas greet you, with reduced blackberry, raspberry, and sweet plum joining with sweet tobacco leaf, fresh berry bramble, mocha, and notes of black peppercorn.

Taste:

Tremendously well rounded on the palate, with robust fruit flavors of dark cherry, boysenberry, raspberry, and subtle cranberry laid overtop cedar wood cigar box, espresso bean, dark chocolate, sage, rosemary, and the slightest touch of lavender.

Finish:

Very well balanced, with a smooth entry and supple mouthfeel.

Pairing:

Fennel-encrusted pork chops with roasted potatoes and shallots.
