Today’s wine is best decanted and given a chance to breathe. Once it opens, this wine will you greet you with classic dark fruit, hints of terroir, and fantastic structure. This structure lends itself to many years of cellaring potential - we recommend trying a bottle now and cellaring the rest for years to come.

Tasting Profile
Look: | Super dark, foreboding scarlet at its core, with only a hint of a lighter ruby at the fringe. |

Smell: | Bold and concentrated aromas of dark plum and blackberry greet you initially and are quickly trailed by sweet tobacco leaf, coffee bean, black peppercorn, and a hint of lavender. |
Taste: | Beautifully well rounded on the palate, with dark fruit flavors of reduced blackberry, black currant, and black cherry delicately laid overtop saddle leather, espresso bean, toasted oak, dark baking spices, pomegranate black tea, and a touch of violet. |
Finish: | After decanting, the wine is incredibly supple and smooth, with fantastic structure and balance. Well suited to many years of cellaring. |
Pairing: | Perfectly grilled filet mignon, served medium rare with roasted root vegetables and golden mashed potatoes. |
