Mission Briefing

Sustainably Delicious

What do you get when you combine a 100% organic vineyard, sustainable winemaking, and well treated workers? A stunningly delicious Paso Robles Estate Cabernet Sauvignon from our friends at Cass Winery.

Today’s wine is jam packed with bold flavors of dark fruit, earthen terroir, and subtle spice, making it a near perfect pairing for an evening around the grill. Many of our tasting panel members remarked that today’s wine would be wonderful paired with a homemade gourmet burger.

Please accept our boldest recommendation for today’s Paso Robles stunner - a delicious wine made even better by having been produced in the most earth-friendly way possible!

Tasting Profile

Inky scarlet, almost perfectly opaque, with a touch of ruby at its fringe.

Deeply concentrated aromatics of reduced black plum and blackberry mingle with cherry cola, sweet tobacco leaf, clove, anise, cinnamon, cassis, fig, and a touch of licorice.

Robust flavors of a dark fruit compote highlighted by blackberry, boysenberry, and dark plum are laid overtop more earthen elements of freshly fallen leaves, slight mushroomy earth, European black licorice, sandalwood, sage, and a hint of dried fennel.

Soft and full on entry, with well integrated, grippy tannins and a hint of dark spice that trails off to a burst of baked cherry.

A gourmet burger, grilled to perfection, and topped with gruyere, mushrooms, and loads of fresh vegetables.
