Tasting Profile
Look: | Inky scarlet, almost perfectly opaque, with a touch of ruby at its fringe. |
---|---|
Smell: | Deeply concentrated aromatics of reduced black plum and blackberry mingle with cherry cola, sweet tobacco leaf, clove, anise, cinnamon, cassis, fig, and a touch of licorice. |
Taste: | Robust flavors of a dark fruit compote highlighted by blackberry, boysenberry, and dark plum are laid overtop more earthen elements of freshly fallen leaves, slight mushroomy earth, European black licorice, sandalwood, sage, and a hint of dried fennel. |
Finish: | Soft and full on entry, with well integrated, grippy tannins and a hint of dark spice that trails off to a burst of baked cherry. |
Pairing: | A gourmet burger, grilled to perfection, and topped with gruyere, mushrooms, and loads of fresh vegetables. |
