Tasting Profile
Look: | Cherry red with slight flecks of dark magenta throughout the glass. |
---|---|
Smell: | Richly layered aromatics of sweet, luxurious fruit, highlighted by boysenberry, dark cherry, and marionberry. These notes are trailed by notes of star anise, clove, rhubarb, mocha, dark chocolate, and just a touch of violet. |
Taste: | Lovely hints of reduced dark cherry and sweet plum greet you on the palate. These flavors are quickly trailed by hints of fresh berry bramble, coffee bean, cedar wood, bay leaf, a touch of cranberry, and, finally, a subtle note of pomegranate herbal black tea. |
Finish: | The lengthy finish has strong echoes of Burgundy, with nice structure, bright acidity, and velvety tannins. |
Pairing: | Pan roasted pork loin, finished with a cherry balsamic reduction drizzled overtop. |
