Hailing from one of the top Champagne houses in Reims, France, today’s wine is what a great bottle of bubbles should taste like. Light and crisp, yet overflowing with notes of exotic fruit and flower petals, today’s wine is a true marvel. A well respected winemaker at our recent tasting panel couldn’t get enough of it, and kept remarking that each successive sip brought out even more expressive flavors.

Tasting Profile
Look: | Pale straw yellow throughout the glass, with the tiniest of bubbles trailing along the edges. |

Smell: | Light and crisp on the nose, with Meyer lemon, wild strawberry, lime leaf, lemon peel, vanilla bean, warm baking spices, a hint of buttery brioche, subtle dried herbs, and white flower petal. |
Taste: | Expressive flavors that deepen and evolve the longer the wine is in the glass. A touch of exotic fruits, highlighted by guava, banana, and pineapple, leads the way on the palate. These are quickly trailed by hints of Granny Smith apple, subtle dried dark fruit, white tea, sweet vanilla, and the faintest kiss of clove. |
Finish: | Incredibly elegant and luxurious, with a very fine plume of mousse. The finish is lengthy, with a bright acidity and beautifully crisp mouthfeel. |
Pairing: | A shrimp and sugar snap pea risotto, served with an almond-basil pesto. |
