Today’s Clos Du Val 2011 Napa Valley Cabernet Sauvignon is a beautifully rich and layered wine that screams to be enjoyed alongside a perfectly grilled steak.
One of the things we love most about Clos Du Val is working with expert winemaker Kristy Melton. A former rodeo queen in West Texas, Kristy learned her craft at some incredible wineries, including Iron Horse Vineyards and Saintsbury. She was recently named one of Wine Enthusiast’s “Top 40 Under 40” rising stars in the wine world - one of only 2 women winemakers on the list. She aims to showcase each wine’s unique characteristics and terroir, and today’s Cab fits this ideal perfectly. Layered with lush dark fruit and subtle spice, the wine continues to evolve, with deeper flavors emerging, the longer it lingers in the glass.
Today’s wine is a true stunner, and promises to be even better with a few years of cellaring. The challenge will be resisting the urge to drink it all now!
Deep aromatics of blackberry and sweet plum are layered against chocolate, coffee bean, freshly tilled earth, hints of a fresh spring garden, and bold notes of sweet dried herbs.
Very elegant and refined in style. Concentrated flavors of blackberry, boysenberry, and subtle raspberry are paired with terroir elements of dried fallen leaves, vanilla bean, sandalwood, caramel, sage, rosemary, dark baking spices, and cedar wood. As the wine opens, hints of fresh blueberry and red currant emerge.
Best decanted, this is a bold wine that needs to breathe. Once the wine opens, you’ll be greeted by a long and lingering finish, with well integrated tannins and lasting hints of dark fruit and spice.
Aged New York Strip, grilled to perfection and finished with rosemary-garlic butter drizzled overtop.
