Tasting Profile

Look:

Deep, foreboding crimson throughout the center of the glass, with a touch of lighter ruby around the fringe.

Smell:

Heady and aromatic, with black cherry, blackberry, and red currant quickly trailed by saddle leather, mushroomy earth, vanilla bean, black peppercorn, and a touch of rosemary.

Taste:

Lush and well balanced on the palate, with black cherry, sweet plum, and boysenberry mingling with fresh cedar wood, toasted dark spice, sweet tobacco leaf, mocha, freshly cracked black peppercorn, rosemary, and a hint of sage.

Finish:

The finish is long and lengthy, with bold flavors, grippy tannin, and lovely structure. Black cherry notes slowly fade into lingering hints of black peppercorn.

Pairing:

Slowly braised Osso Buco, with the sauce drizzled overtop.
