Today’s 2007 Lazare Vineyards Cabernet Sauvignon marks the TWS debut for Sineann Winery. Based in Newberg, Oregon, winemaker Peter Rosback was curious to see what he could do with grapes grown in the world renowned Napa Valley. Well, Operatives, have we got a treat for you today.

Sineann is Gaelic for “this is it,” and, wow, THIS is it! Today’s wine is incredibly lush, with layer upon layer of fruit, terroir, and spice to explore. First a touch of blackberry and sweet plum, then hints of sweet tobacco and sandalwood, and, finally, notes of dried flower petals greet you at the very end of the finish.

Tasting Profile

Look:

Deepest, darkest scarlet in the center of the glass.

Smell:

Bold and richly layered aromas leap from the glass, with dark cherry and blackberry mingling with sweet tobacco leaf, freshly tilled earth, dark baking spices, dried rosemary and sage, and a lovely pop of potpourri.

Taste:

Deliciously well balanced, with flavors that fulfill on the promise of the nose. Deep dark fruit of sweet plum, boysenberry, and black cherry lay overtop sweet leather, espresso bean, clove, anise, sage, rosemary, and a touch of herbal black tea.

Finish:

Soft, supple, and right at its peak, today’s wine is drinking beautifully, with firm structure and a lovely note of acidity in the finish.

Pairing:

A slow roasted duck breast, sprinkled with Chinese 5-spice and finished with a dried plum balsamic reduction.
