Tasting Profile
Look: | Dark crimson, almost cherry red, in the center of the glass. This color persists nearly perfectly from center to edge. |
---|---|
Smell: | Delightful fruity aromas of fresh cherry and strawberry are joined by a surprising, though most welcome, note of dried blueberry. These are joined by subtle hints of dried fallen leaves, fresh bramble, soft brown baking spices, and white peppercorn. |
Taste: | A very nice blend of fresh and dried fruit lead the way on the palate, with fresh dark cherry and boysenberry mingling with dried Mission fig and raspberry. Notes of berry bramble, cinnamon, nutmeg, coffee bean, and soft dried herbs join in. |
Finish: | Velvety on the finish, with berry flavors slowly trailing away while a persistent note of brown baking spice lingers through until the end. |
Pairing: | Grilled shrimp, served with a drizzle of tamarind sauce. |
