Mission Briefing

For the Ages

If Napa Cabs are king, then today’s Vellum Wine Craft 2011 Napa Valley Cabernet Sauvignon is aiming for a lengthy reign. Vellum Wine Craft takes pride in producing wines with excellent aging potential, and this vintage most certainly delivers.

Incredibly deeply flavored, this wine drinks beautifully now with some decanting. After it’s been given a chance to open, you’ll be greeted by robust notes of sweet plum, black cherry, and dark baking spices - flavors that every Cab lover craves. These deep flavors are also a sure sign that the wine will transform into something magnificent after a few years in the cellar.

We love wines like today’s that we can enjoy now and also plan to enjoy in the future. We highly recommend stocking up on enough of this gem to let you do both!

Tasting Profile

Super deep, dark crimson throughout the glass, with a lighter red ruby around the fringe.

Bold aromas of dark plum and blackberry are framed by hints of cassis, sweet tobacco leaf, nutmeg, clove, sandalwood, black peppercorn, and a touch of espresso bean.

Well balanced and delicious flavors of sweet plum, boysenberry, and a touch of wild raspberry are layered overtop freshly tilled earth, dried fall leaves, pipe tobacco, dark baking spices, and a lovely note of river rock minerality.

This robust wine is best decanted. After it’s been given a chance to open, you’ll be greeted by a very smooth finish, with dark fruit and spice flavors that linger through the long finish.

Beef short ribs, braised with fresh bay leaves and a tamarind balsamic glaze.
