Tasting Profile
Look: | Dark garnet in color, showing tremendous depth through the core of the glass. |
---|---|
Smell: | Classically elegant Pinot aromas waft from the glass after an encouraging swirl or two. Dark cherry and blackberry mingle with cedar wood cigar box, dried fallen leaves, soft summer earth, and freshly ground peppercorn spice. |
Taste: | Fresh and bright, with just a touch of seriousness, today’s wine is well balanced between nice fruity flavors of raspberry and black cherry, and more earth driven elements of sweet tobacco leaf, cedar wood shavings, pomegranate herbal black tea, dark baking spices, and black peppercorn. |
Finish: | A lengthy finish that’s highlighted by pleasant acidity and extra fine tannins. At the very end, a touch of pomegranate herbal tea lingers on the tip of the tongue. |
Pairing: | Grilled salmon, served with a sweet chili glaze and sugar snap peas. |
